I can't face another sandwich! How can I get back to packed lunches?

I've been very good with making sandwiches for myself everyday for years but recently I have become repulsed by the boring things. Also working in Soho means there are so many nice places to grab some really tasty food for around £4 but I am aware of how much £4/day costs over the long term.

Please help with varied and tasty homemade lunchtime ideas!

    Oh ho ho, this is my forte! Here are a few tips...

    1. Get yourself a plastic container and bring in dinner leftovers, OR take a bit of extra time to make two dinners one night -- say, spag bol and a pasta salad -- and then bring the second one in for lunch.

    2. Make roast chicken at home, slice the meat up and bring in some of that, a bit of veg and bakery rolls. SO much better than a sliced-bread sarnie.

    3. Bring in a potato, some cheese and beans or tuna or whatever you like on your jacket potato. Bake and then melt it in the microwave.

    OK, a start? What do you like for lunch?

    You could try a nice big salad with brown rice, or crusty bread and meat/fish and a give it a theme to keep it interesting.

    For me the theme is all about the dressing. You could try japanese style dressing - adding soy sauce, white wine vinegar and grated fresh ginger, french style dressing - mustard, oil and vinegar, mediterranean style dressing - balsamic and oil. 

    Seeds are a good topping - they add more flavour than you think - sunflower, pumpkin and sesame are good. Herby leaves like basil and parsley also add nice flavours.

    You could also use random things in your salad. I had one with figs in it the other day. Another nice thing is to roast a load of vegetables and use them in your salad - takes a bit of time the night before though.

    Leftovers.

    Buy a bag of the mixed leaf salads (the Asda one with grated beetroot is my favourite) and chuck a good handful of that in a bowl with a portion of whatever meat is left over from the Sunday roast or the weekend BBQ. Chicken is great but a mix of ham and cheese is great too. Try to find a way to carry the salad dressing separately as the salad can wilt. The mozzarella balls are also good - drain well before adding or pack separately.

    Or if you don't like salad - so up some pasta - wholewheat fusilli is nice, nutty and easy to eat. If you undercook it slightly it will absorb any excess liquid from tomatoes. I tend to mix creme fraiche or yoghurt in with some oil, balsamic and/or mayo for the dressing.

    Add some fresh herbs for that bistro effect (basil or marjoram).

    Or after the curry fest - pop that last spoonful of your vindaloo, sag aloo & whatever and top with the last of the pilau rice.

    Or keep yourself good by buying the best cup-o-soup & nice oat cakes to keep in your desk and grabbing a couple of baby bell on your way out the door in the morning.
