It's Pancake Day - check out this flipping amazing recipe for delicious pancakes!

Pancakes! I'll be totally honest. I think they're overrated and for me this explains why we only eat them once year. I know many people do like to indulge once a year though so here are two great recipes for pancakes (one savoury and one sweet) and the best batter I've come across. This recipe serves 4 - so around 20 pancakes.

Ingredients

  • 1 pint of milk (45p)
  • 2 large eggs (54p)
  • 240g of plain flour (43p)

Total: This trolley was cheapest at Asda, according to mysupermarket.co.uk, where it came to £1.42 in total - so 35p per person.

Toppings

  • Streaky bacon - £1.64 for 10 slices at Tesco & Asda
  • Strong cheddar - £1.54 at tesco
  • Spring onions- 70p at Tesco
  • Nutella - £1.44 at Tesco

The cupboard staples...

Caster sugar, salt, butter and vegetable oil, hazelnuts.

Instructions

  • The mix really isn't complicated and try and ignore all these recipes that make it that way! (See Delia and having to rest the batter etc). Just whisk together 180ml of milk, 2 large eggs, and 240g of flour, ½ teaspoon of salt and ½ teaspoon of caster sugar - then add the rest of the milk (320ml) and mix into a smooth batter. Easy.
  • Get a large non stick pan on the heat and add a knob of butter and a little vegetable oil and heat until the butter foams (try not to get to much butter or oil in the pan as you don't want greasy pancakes). Then add enough batter to cover the pan, leave for 45 seconds and then use a palette knife to work from the edges into the centre of the pancake. Once loose just flip and then cook for a further minute. Once cooked stack between greaseproof papers.
  • Toppings are obviously a deeply personal preference - but I would recommend grilled streaky bacon, strong cheddar and sliced spring onions for savoury and Nutella (or supermarket home brand spread) and crushed hazelnuts for sweet.

    Actually leaving it to reat is a good idea as if you mix it all together you can still have tiny lumps of flour mixed into it, leaving it to sit seems to dissolve these into the mix. I had wonderful pancakes this way.
