Christmas can be a stressful and an expensive time of year, especially if you're cooking for the family on Christmas day (not to mention Boxing Day as well).

I’ve created a menu which is a delicious alternative to the traditional Christmas dinner that I guarantee your family will enjoy, at very little cost.

Over the next 3 weeks I’ll be showing you a starter (today's recipe, below), a main course (one for vegetarians, one for meat-eaters), a delicious Christmas dessert and what to do with the leftovers for a family of six.

And all for £7.57 per person!

Get Xmas off to a smoking good start!

The starter

Here are the ingredients for my frugal starter: smoked mackerel pate on crostini and red onion confit (serves 6, total cost £6.89 - £1.15 per person). Read the full recipe here.

  • 600g of smoked mackerel (£4.42)
  • 5 large red onions (80p)
  • 1 lemon (27p)
  • 300ml of crème fraiche (£1)
  • 1 fresh granary baguette (40p)

Don't forget the cupboard staples (salt, black pepper, olive oil, horseradish sauce and red wine vinegar). Read the recipe.

A pheasant day to spend the day

The main

Here are the ingredients for my frugal main course for meat-eaters: 

Roasted pheasant (with garlic and bacon), caramelised sprouts, rosemary roasts, bread sauce and peach, sausage and thyme stuffing.

Yum!

Serves six, total cost £26.73.

That's £4.45 per person.

Here are the ingredients for my frugal main course for vegetarians: Portobello mushroom, port and stilton wellington.

  • 2 large red onions (32p)
  • 25g of fresh thyme (68p)

A tasty tart

The dessert

Here are the ingredients for my frugal dessert: a delicious lemon tart with fresh vanilla mascarpone.

  • 250ml of long life double cream (90p)
  • 250g of Italian mascarpone (£1)
  • 6 Hoads farm medium free range eggs (£1.49)
  • 1 fresh vanilla pod (£1.44)

  • 1 block (500g) of sweet shortcrust pastry (£1.50p)
  • The cupboard staples (icing sugar and a dash of milk).

The leftovers

Here are the ingredients for a delicious meal you can make with either your turkey or your pheasant leftovers (if you've been following this series of recipes): Massaman curry.

  • 2 cans (400ml each) of Island sun coconut milk (90p)
  • 1 jar (105g) of Bart Massaman paste (£1.75)

    Hi!

    Talking about fish... I have a very frugal, very simple and very tasty recipe for a "Brandade de Maqueraux". That's French for makerel.

    Traditionally, a "Brandade" is a mixture of potatoes and salted cod. But I have made this complicated recipe much simpler: mash some tasty freshly cooked potatoes and add lots of garlic to it. Open a tin of maquerels (in olive oil or sunflower oil) and add the fish and the oil to the mash. Mix well and add some fresh persley. That's it! It's ready and it's tasty and super healthy!
